For setting at 0°, place 1/4 from bottom of an open pan containing soft boiling water (boiling since 3 min) • Syrup reaches 66° Bx when dial indicates 7° F • The thermometer must be set back to 0° after each atmospheric pressure change, except if you are using a barometer.
